Don’t you just love pecans? Pecans are by far one of the most better tasting nuts. Which is good, but in some ways it’s also a pain. For example, have you ever noticed that supermarkets are almost always out of bags of pecans? Seriously, finding even one bag at my local supermarket is an extremely rare occurrence. It’s kind of depressing. However, while wandering around the supermarket last week, I saw it. The last bag of pecans, hiding behind dozens of bags of walnuts. It would appear that the Banana Week gods were on our side.

Don’t you just love having time? I kind of forgot how awesome it was, what with exams & college & work all piled up on top of me. However, things have (finally) changed. As of today, I am officially finished my second year of college. No more assignments, no more lectures, & most importantly, no more exams! I celebrated by taking a lovely long shower & I actually relaxed while I ate lunch. Imagine that, contently eating without feeling like you should rush to get something else done! It was blissful.

Blueberry, Almond & Honey Porridge

Ever since I began my quest to discover all the best possible porridge flavours & toppings, I have been in love with porridge. My tired morning self doesn’t mind gathering all the ingredients, waiting the minute & a half until it has to be stirred, or even the watching through the microwave door so as to catch the porridge in that split second before it overflows the bowl. That last bit is probably the hardest part. I don’t know about you guys, but my microwave door has a black spotted design all over it & if I look through it too long I feel like I’m going blind & actually can’t see anything anymore. Yep, this is my life. Regular morning blindness, all over a bowl of porridge.

You know those days when things just work out? For instance: when Julie Powell magically had all the ingredients for Julia Child’s ‘Potage Parmentier’ & thus started her baking blog. Well, I happened to have lemons that needed to be used up, as well as limes left over from Cinco de Mayo that needed to be used up. Okay, so it’s not as big a deal as Julie Powell’s discovery, but it did result in the most delicious curd ever. Possibly in the whole world.

I have a confession to make: I am a lemon lover. To the extreme. What’s that you said? Cake stuffed with lemon pulp, drenched in lemon syrup & covered in lemon frosting with lemon rind grated on top, with a side of lemon juice? I’ll take two slices please.

The more lemon, the better. ”Too much lemon” is not a statement that registers in my mind.

Mango, Pineapple & Banana Smoothie

The blog has really grown so much in the last month. Quite frankly I’m amazed at the amount of people who are interested in what I have to say. It’s a pretty awesome feeling, so thank you! The last few days have been pretty awesome for me: I got my first exam over & done with (only three more left until summer starts!), the weather here has been amazing, & don’t get me started about the amazing deal that I got on a huge bunch of bananas. Strawberry Cheesecake Parfaits

You know those moments when you rush through taking the photographs so you can just start eating already? That’s what happened here. I was clearly in such a desperate need to eat that I seemed to overlook the fact that the pictures look like i bled all over the table  a little unpleasant. I don’t know what happened. My brain must have fallen out when I caught sight of all the strawberry goodness oozing out of the glass. There is no other possible explanation. You’ll just have to have faith in the old saying: don’t judge a book by it’s cover. In this case: look past the bloody intriguing exterior of these Parfaits & trust me when I say they have most delicious interior.
